Maybe It's a Little Backwards...

Sometimes we get stuck into a rut when it comes to meal-planning. We all have a few tried-and-true recipes, and sometimes these get overused. Mix things up a bit by serving breakfast foods for dinner. Not only will this be a fun meal for your family to enjoy, but it's also a good way to put a very inexpensive dinner on the table.

Many breakfast foods are very inexpensive. Put a few items together, and you have a frugal and fun meal for your family. Try serving pancakes or waffles with eggs, bacon or sausage, and a side of inexpensive fruit. This will give you a meal for less than two dollars a serving. Another option is biscuits with sausage gravy.

Make your pancakes or waffles from scratch instead of from a mix. Check out the recipe for whole wheat pancakes below, use your own recipe, or make homemade Bisquick mix.

Here is one of our family's favorite pancake recipes, taken from my mother-in-law.

Whole Wheat Kernel Pancakes

In blender, liquefy for four minutes:

1 cup milk 3/4 cup whole wheat kernels

While blender is still running, add:

2 eggs 1/2 teaspoon salt 1 tablespoon oil 1 tablespoon honey or sugar 2 teaspoons baking powder

Add the baking powder last and stop blender when batter is mixed. Pour batter directly from blender onto hot griddle.

These pancakes are not only tasty, but they are made with fresh whole wheat--which makes them better for you than pancakes made with white flour. You can find wheat kernels (also called wheat berries) at farmer's market or health food stores that sell grains in bulk bins.

Though it's definitely not traditional, eating breakfast foods for dinner is a fun change from the ordinary. Kids will especially enjoy the fun of this backwards meal.
