Main Meals: Try these ideas to make bread, fresh or stale, into a main meal.The most obvious choice with bread is for sandwiches. Dig around for whatever is at hand. Lunch meat and cheeses could be served on bread for dinner, but what about leftovers? A little mayo or salad dressing, or a little olive oil can turn everything into a meal. Combine some salsa, cheese and corn, mix it together and throw it between two tortillas and warm it up. Sandwich shredded or whole mozzarella between two slices of bread. Dip the sandwiches in milk, flour and egg and then cook like a grilled cheese. These sandwiches are very filling. Turn your bread into filling dumplings that can be added to canned or homemade soup, or tossed with gravy for a filling meal. Crumble up stale bread, bread ends or whatever you have into a large bowl. Use your microwave to warm up butter and milk in a measuring cup. Pour the butter and milk mixture over the bread. Add two or three eggs and knead it all together. Form dumpling balls and then boil the balls in water for about 20 minutes. Check in tomorrow, when I share some more ideas in this series. Will have to keep the bread machine cranking away ; ) One of my fave meals right now is tomato sandwiches with homemade wheat bread, organic tomatoes, and grape seed oil vegenaise.
