My Turkey Freezer Session 2

pot This is another day of creating some freezer meals to use up leftover turkey from a large bird. Yesterday, I got a lot accomplished, although my kitchen looks like "Mount Dishmore." That is one of the downsides to cooking in large batches. I try to clean up as I go along, which can help quite a bit.

So far, I have the following food completed and put into the freezer:

12 turkey and cheese "hot pockets" made with a wheat crust

12 turkey enchiladas

I batch of turkey stock.

While this might not seem a lot when you think about it, this will provide several quick meals for our family. My son especially likes the hot pockets, and they are a great way to get in a quick meal on the go, since they can be popped into the toaster oven at the last minute.

At this point, all of the dark meat has been used up, but I still have plenty of white meat. Still on the list for more freezer meals are:

2 more batches of turkey stock

2 large family-size turkey pot pies (each will provide two meals)

12 more turkey and cheese hot pockets.

After those meals are completed, I will shred whatever remaining white meat is left and freeze it. It will be wonderful in casseroles or tacos. I will also make some of the turkey into that creamy dish I spoke about earlier. It is very fattening, but oh so good.

If I get really ambitious, I'll also put up some pizza crust and more mashed potatoes. I'm still waiting for a good sale on ground turkey so I can do a big freezer session with it and turn it into meat loaf, and browned meat for all sorts of dishes.

The turkey I used for this session was purchased during the holidays at only 79 cents a pound and put immediately into the freezer.

I like to make Turkey Lasagna Alfredo w/ our turkey, too. I usually make enchiladas, pot pies, & turkey lasagna alfredo to freeze, and use some of the meat to make quesadillas throughout the week. I roast frozen corn on a pan until it pops, and brush on olive oil on the tortilla, add cheese, beans, roasted corn, & turkey. I salt one side of the quesadilla. I got the idea from America's Test Kitchen show on PBS a few years ago.

OOh that sounds wonderful. Can you share the Turkey Lasagna Alfredo recipe, too?

Turkey Lasagna Alfredo 10 uncooked lasagna noodles 1 jar (16 oz) Alfredo pasta sauce (or make your own) 1/4 c. milk 1 1/2 tsp dried oreano leaves 3 c. coarseley chopped cooked turkey 14 oz artichoke hearts, drained & chopped (I like to put in a little more than the recipe calls for) 1 c. chopped bell pepper 1/4 c finely chopped onion 1 garlic clove, pressed 3 c shredded mozzarella cheese 4 oz crumbled feta cheese 4 c packed fresh baby spinach leaves 1. Preheat oven to 375. Cook noodles, drain. In small bowl, combine alfredo sauce, milk & oregano. Whisk until blended, set aside. 2. Coarsely chop turkey, chop artichokes, bell pepper & onion, place in large bowl together with garlic, mozzarella & feta cheese, mix well. 3. Spread 2/3 c. of Alfredo sauce mixture over bottom of casserole dish. Top with 3 noodles, spinach leaves, chicken mixture, & sauce, then repeat until all ingredients are used up :) 4. Cover w/ aluminum foil & bake for 45 min. Remove foil & bake for 10-15 more minutes or until bubbly.

If you have a Costco membership, I usually will buy the feta cheese, mozzarella, & spinach leaves from Costco. I have priced it out, and it is much cheaper.
