The Frugal Baked Potato (2)

As most of you who read my articles know, one of my favorite meals is baked potatoes, because of the frugal and fast nature of the spud. They are inexpensive and easy to find and come in so many different varieties. You can sometimes even find more exotic types. And each of them has their own distinct flavor.

In The Frugal Baked Potato (1), I gave you a couple of frugal topping ideas for this delicious dinner. And in this article, I will give you a few more. Sweet Potato Casserole - Trying something different one night, I made sweet potatoes instead. We topped them with butter, brown sugar, cinnamon and nutmeg, and mini marshmallows. The mixed them up until they were a sticky mess and ate every bite (except the peel). They all said they felt as if they were eating dessert for dinner, and I think in a way they were! Since that wasn't the healthiest meal, we added a salad to the side, made some frugal stuffing and also offered the option of a turkey sandwich. It was an awesome meal, and we've made it several times since.

Soup in a Spud - This came quite by accident one night while I just had our three youngest for dinner. I hadn't planned to make dinner, ordering was easier, but it got late fast. So I popped some potatoes in the microwave and opened several different cans of soup. Beef Vegetable, Clam Chowder and even a can of Chicken Noodle. Because I opened three soups, mostly because I wasn't sure how good it would be, they opted to cut their potatoes in three so they could sample them all. I cannot even tell you how quickly those potatoes disappeared or how many times they have asked to have that for dinner since. Whenever soup is on sale, I stock up.

Potatoes will always be a frugal meal, and can be altered in any way. Just have fun with it, and you'll be surprised what you can make! I'll be adding more ideas as we try them, so watch the Frugal Living Blog!
